Our Oatmeal Pancake Mix is something special. Take a classic buttermilk pancake, add oats and brown sugar, and it becomes magic! Oatmeal Pancakes have all the ‘fun’ of our classic pancakes, and the staying power of a hearty bowl of oatmeal.
To make the batter, you add eggs, buttermilk, and canola (or other vegetable) oil to the Oatmeal Pancake Mix. You can also add blueberries, apples, cranberries, toasted pecans to the batter. Each bag of mix will make 30 four-inch pancakes.
If you aren’t serving a hungry crowd and have leftover pancakes or batter, you have a few options. First, you can cook up all the batter then freeze any uneaten pancakes for a quick breakfast or snack. Or you can refrigerate any unused batter overnight and make fresh pancakes again the next day. You can also freeze the pancake batter in sealed containers, then thaw and cook another day. Freezer life of the pancake batter is 4-6 weeks.
